HARICOTS SONT PAS SALES, LES (The Snapbeans Aren't Salted). Cajun (Zydeco), Two-Step. USA, Louisiana. A Major. Standard tuning (fiddle). ABA(Vocal)CDEF(Vocal)A. Raymond Francois (1990) notes green snapbeans are very bland and need to be salted to be palatable. The song gave its name to Zydeco music, the hybrid of Cajun and Rhythm and Blues music, as 'zydeco' is a phonetic spelling of 'les haricots'. Related songs include "Huppes Taiauts (Les)" and Clifton Chernier's "Zydeco est Pas Sale."

Source for notated version: Aldus Roger (La.) [Francois].

Printed sources: Francois (Yé Yaille Chère!), 1990; pp. 160-162.
