Tune properties and standard notation
ESSENCE OF SUGAR CANE. American, ("Slow") Jig. C Major. Standard tuning (fiddle). AA'BB (Cole): AA'AA'BB (Phillips). The tune is written as a jig in Phillips collection, and as a slow 4/4 dance in Ryan's/Cole's; it has a dotted rhythm similar to a clog or hornpipe, which can be rendered in either duple or triple time. John Hartford believes the tune similar to "Darkey's Dream/Darkie's Dream." Bayard (1981) sees a general resemblance to "Fred Wilson's Clog" or "Harvest Home." See also the variant "Acorn Stomp," recorded by the East Texas Serenaders in 1928, and the Irish barndance derivative "Offally Favorite."
