TUMBLE THE JUG. Irish, Jig (6/8 time). E Dorian. Standard tuning (fiddle). AB. "Tumble the Jug" was also entered into the large mid-19th century music manuscript collection of County Cork cleric and uilleann piper wikipedia:James_Goodman_(musicologist) (1828-1896). Goodman had another version in Book 1 of his manuscript collection under the title "Humors of Jug (The)," although the first strain is the only one cognate; the subsequent three strains are similar variants, but musically different than Joyce's tune.
"Tumble the Jug" is probably a piping tune.
