CHAW (THAT) ROAST BEEF. American, Cakewalk or "Walk Around." C Major. Standard tuning (fiddle). ABC, Break. A 'walk-around' was the finale of the first part of a black-face minstrel show, sometimes repeated at the end of the performance to close the curtain. The performers would walk around the stage, with a dance step similar to a buck-and-wing, sometimes patting improvisations on the knees or other parts of the body. "Chaw Roast Beef" was a walk-around composed by Dan Emmett in 1859, when he was a member of Bryant's Minstrels.
