BRASSE LE COUCHE-COUCHE (Stir the Couche-Couche). Cajun, Waltz. USA, southwestern Louisiana. G Major. Standard tuning. A(Vocal)ABBB(Vocal). Couche-Couche derives from the arabic word couscous, a meal made from duram wheat, salt and water. Having little wheat, Cajuns substituted cornmeal for their couche-couche.
